Courgette And Sweetcorn Cakes Recipe

Ingredients
  • 1/2 tsp dried dill .
  • sweet chili sauce .
  • 5 tbsps maize meal .
  • 1 tsp ground cumin .
  • 2 tbsps olive oil .
  • 250 g baby corn, sliced in 5mm coins .
  • 3 garlic cloves, crushed .
  • vegetable oil (for frying) .
  • 400F g grated courgettes .
  • to serve .
  • sliced coriander

Directions
  • Step #1 Squeeze as much water as you can from the courgettes.
  • Step #2 Heat the oil in a pan & add the corn, courgette & garlic.
  • Step #3 Cook for 5 mins stirring often, veg should be tender.
  • Step #4 Add maize, cumin & dill & stir well.
  • Step #5 Heat for 2 - 3 mins until the mixture is thick & holds together well.
  • Step #6 Allow to cool.
  • Step #7 Once the mixture is cool enough to handle form into 12 cakes (approx).
  • Step #8 Heat the veg oil & fry the cakes until golden on both sides.
  • Step #9 Drain & keep warm until all are done.
  • Step #10 Serve with sweet chilli sauce & scattered with coriander.
