Dan's Jambalaya Recipe

Ingredients
  • 1/2 c bell peppers, sliced .
  • 1/4 c oil .
  • 2 large onions, sliced .
  • 8 skinless chicken thighs, de-skinned .
  • 4 c cooked rice, 2 c. rice cooked in .
  • 14 1/2 oz sliced tomatoes, with chili's such as Ro-Tel .
  • 1/2 lb shrimp .
  • 2 tsps salt .
  • 2 tbsps green onion tops, sliced .
  • 8 oz tomato sauce .
  • 1 tsp salt .
  • 2 large celery ribs, sliced .
  • 2 tbsps fresh parsley, sliced .
  • 4 c chicken stock .
  • 3 garlic cloves, sliced .
  • 1 tbsp tony's creole seasoning .
  • 1 lb andouille sausages or chorizo sausage, cut into 1/4-inch slices, I used Chorizo

Directions
  • Step #1 Heat oil in a lg.
  • Step #2 , thick pot on med-high heat.
  • Step #3 Add chicken thighs, brown on all sides & cook about 10-15 mins.
  • Step #4 Add sausage, half the Tony's seasoning, & salt.
  • Step #5 Cover up, & cook this until chicken is well-done, lower heat, about 15 mins.
  • Step #6 Remove chicken & sausage, & drain all except 1/3 of the drippings from the pot.
  • Step #7 Add onions, & garlic, bell pepper, celery, & saute until tender.
  • Step #8 Stir in tomato with chili's, & return chicken (de-boned), the rest of the Tony's seasoning, & salt, tomato sauce, & sausage to the pot.
  • Step #9 Cover up, & let simmer about 10 mins.
  • Step #10 Add shrimp, parsley, & green onion tops, cooking an extra 5 mins.
  • Step #11 , covered.
  • Step #12 Fold in cooked rice, & let simmer about 10 mins.
