Alicia's Jambalaya Recipe

Ingredients
  • worcestershire sauce (4-5 Dashes) .
  • 2 c water .
  • black pepper (to taste) .
  • 1 large red onion (cut into bite-sized pieces) .
  • 1 lb beef sausages (cut into bite-sized pieces) .
  • 3-4 garlic cloves (finely sliced) .
  • 1 jalapeno (finely sliced with seeds & ribs removed) .
  • extra virgin olive oil .
  • 1 c white rice .
  • 1 tsp seasoning salt

Directions
  • Step #1 WHITE RICE.
  • Step #2 Start white rice in pan.
  • Step #3 Make 1 c of rice with a 2:1 ratio (2 parts water to 1 part rice).
  • Step #4 Bring 2 c of water to a boil.
  • Step #5 Add 1 c of rice.
  • Step #6 Cover up & reduce heat to LOW.
  • Step #7 After 10-15 mins, check rice.
  • Step #8 Stir & “fluff” with a fork to make sure water is absorbed.
  • Step #9 Once it is done, remove this from heat & pour this into a mixing bowl.
  • Step #10 SAUSAGE & ONION MIX.
  • Step #11 Heat a separate frying pan on HIGH heat.
  • Step #12 Add nice (moderate) amount of Extra Virgin Olive Oil to pan.
  • Step #13 Add sliced onion & sauté (reserve some onion to add at the end).
  • Step #14 Stir frequently to avoid burning.
  • Step #15 The onions should be a translucent color.
  • Step #16 Add garlic & sauté until onions are golden.
  • Step #17 Add sausage, sliced jalapeno, & any reserved onion & seasonings.
  • Step #18 Stir frequently to avoid burning.
  • Step #19 TIMING -- Provided your rice is fully cooked & the sausage is heated through, you're done & can mix everything together.
  • Step #20 If your rice still needs a little time, while you're waiting, reduce heat for the sausage mixture to Medium Low or Low (just enough to keep it nice & hot).
  • Step #21 In a separate mixing bowl, mix white rice with sausage mixture.
  • Step #22 The drippings from the frying pan are what make the white rice “dirty,” so make sure to scrape everything into the bowl.
  • Step #23 Stir & toss well.
