Mushroom Barley Pilaf Recipe

Ingredients
  • 1 c barley .
  • 1 tsp basil .
  • 1 1/2 c mushrooms, sliced .
  • 4 tbsps olive oil .
  • 2 1/2 c vegetable stock .
  • 1 medium onion, sliced .
  • 1/3 c sun-dried tomatoes, sliced

Directions
  • Step #1 Heat vegetable stock in a saucepan or the microwave.
  • Step #2 Heat olive oil in a deep skillet on low heat.
  • Step #3 Add the onion & saute until soft (1-2 mins).
  • Step #4 Should be slightly golden.
  • Step #5 Add mushrooms & basil & continue cooking about 4 mins.
  • Step #6 Stir in barley; be sure it's well coated.
  • Step #7 Raise heat to medium & cook 5 more mins.
  • Step #8 Stir in hot veg.
  • Step #9 stock & bring to a boil.
  • Step #10 Reduce heat & let simmer 25 mins until all liquid is absorbed.
  • Step #11 Reserve some tomatoes for garnishing & mix in the remainder.
