Parmesan And Pine-nut Crusted Chicken Breasts Recipe

Ingredients
  • 1/4 c shredded parmesan cheese .
  • 2 garlic cloves, minced .
  • 1 tsp crushed red pepper flakes .
  • 1 c Italian seasoned breadcrumbs .
  • 1/4 c Egg Beaters egg substitute .
  • 4 boneless skinless chicken breasts, lbed thin .
  • 1/2 tsp coarse black pepper .
  • 2 tbsps olive oil .
  • 3 tbsps pine nuts

Directions
  • Step #1 Place first 6 ingredients in food processor/blender, process until nuts are sliced finely.
  • Step #2 Pour mixture onto a plate.
  • Step #3 Coat chicken in Egg Beaters & dredge in bread crumb mixture Heat olive oil In a large-ish skillet over medium-high.
  • Step #4 Place chicken breasts in the skillet & cook 3 mins on each side, until browned.
  • Step #5 Transfer chicken to a baking dish & finish cooking in the oven at 375 degrees for 15-20 mins.
  • Step #6 Serve chicken topped with jarred pesto sauce or heated marinara sauce.
