Black Bean And Jalapeno Jack Stuffed Bell Peppers (vegetarian) Recipe

Ingredients
  • 1 (4 oz) can corn, drained .
  • 1 (8 oz) can black beans, rinsed & drained .
  • 1/4 c wild rice .
  • 1/3 c jalapeno jack cheese, shredded .
  • 1 tbsp fresh cilantro .
  • 1 pinch salt .
  • 2 large red bell peppers .
  • 1 small onion, sliced .
  • 1/2 c vegetable broth

Directions
  • Step #1 Fill a large pot half full with water; bring to a boil.
  • Step #2 Meanwhile, cut tops off of peppers & remove the seeds.
  • Step #3 Chop pepper tops; set aside.
  • Step #4 Add whole peppers to boiling water.
  • Step #5 Reduce heat & cook, covered, for four mins.
  • Step #6 Meanwhile, uncooked rice, black beans, in a medium saucepan mixd the pepper tops, corn, onions, salt & 1/2 c vegetable broth.
  • Step #7 Bring to a boiling; reduce heat.
  • Step #8 Cover up & let simmer for 15 mins or until rice is tender.
  • Step #9 Stir in cilantro & half of the cheese; toss to mix.
  • Step #10 Fill peppers with rice mixture.
  • Step #11 Place peppers in a glass baking dish; sprinkle with remaining cheese.
  • Step #12 Bake at 400F degrees for about 15 mins or till cheese melts.
