Beef And Guinness Stew Recipe

Ingredients
  • 2 lbs beef stew meat .
  • 2 c carrots, largely sliced .
  • 1/4 tsp salt .
  • 1/4 tsp black pepper .
  • 2 onions, large coarsely sliced .
  • 2 tbsps tomato puree, dissolved in 4 tbsps water .
  • 3 tbsps oil .
  • 1 tbsp fresh thyme .
  • 1 1/4 c Guinness stout .
  • sliced parsley .
  • Garnish .
  • 1/4 tsp cayenne .
  • 1 garlic clove, crushed .
  • 2 tbsps flour

Directions
  • Step #1 Trim the meat of any fat or gristle, & cut into 2-inch cubes.
  • Step #2 Toss beef with 1 tbsp of the oil.
  • Step #3 In a small bowl, season the flour with salt, pepper, & cayenne.
  • Step #4 Toss meat with seasoned flour.
  • Step #5 Heat remaining 2 tbsps oil In a large-ish skillet over high heat.
  • Step #6 Brown the meat on all sides.
  • Step #7 Reduce the heat, add the onions, crushed garlic & tomato puree to the skillet, cover, & cook carefully for 5 mins.
  • Step #8 Transfer the contents of the skillet to a casserole & pour half of the Guinness into the skillet.
  • Step #9 Bring Guinness to a boil & stir this to dissolve the caramelized meat juices on the pan.
  • Step #10 Pour over the meat, along with the remaining Guinness.
  • Step #11 Add the carrots & thyme.
  • Step #12 Stir & adjust seasonings.
  • Step #13 Cover up the casserole & let simmer over low heat/flame, or in a 300F degree F oven until the meat is tender, 2 to 3 hrs.
