Madras Curry Recipe

Ingredients
  • 2 garlic cloves, crushed .
  • 4 tbsps oil .
  • 1 large onion, sliced .
  • 2 dried red chilies, sliced .
  • 2 tsps ground coriander .
  • 1 tbsp curry powder, mixed with .
  • 4 cloves .
  • 4 green cardamom pods, slips open .
  • oil .
  • 1/2 tsp salt .
  • 1/4 pint stock, made with a cube .
  • 2 green chilies, sliced .
  • 1 tsp ground cumin .
  • 2 lbs lean meat, sliced & fat free .
  • 1 inch fresh ginger, grated

Directions
  • Step #1 Heat the oil in a pann & fry the onions, cloves & the cadamoms for 5 mins.
  • Step #2 Add the green chilli, ginger, dried chilli, & garlic cook for 3 mins.
  • Step #3 Mix the curry powder withh a little oil to form a paste & add to the pan.
  • Step #4 cook for 3 mins Add the meat & cook for 5 mins Add the coriander, cumin,salt & stock, cover & let simmer till meat is tender.
  • Step #5 Serve with pomegranate rice.
  • Step #6 Boil the rice, seed a pomegranate & stir the seeds into the rice.
