Greek Halva (a Semolina Pudding) Recipe

Ingredients
  • 2 1/2 c sugar (or less) .
  • 4 c water (hot) .
  • 2 c ground semolina .
  • 1 tsp cinnamon .
  • 1 c olive oil .
  • 1 c raisins (optional) or nuts (optional)

Directions
  • Step #1 Brown the semolina in the oil on medium - high heat stirring continuously for 3 mins.
  • Step #2 Add the sugar, the nuts (if using) & continue stirring for another 4 mins.
  • Step #3 When the semolina has taken a brown colour add the hot water.
  • Step #4 (Be careful, there are bubbles & steam!) Turn the heat down & continue stirring until the mixture is very thick & its pulls away from the sides of the pan as stirring.
  • Step #5 Spoon into a bundt pan, on in small bowls & unmol onto a platter on onto individuals plates.
  • Step #6 Sprinkle top with more nuts & cinnamon.
