Spaghetti With Pancetta And Sun-dried Tomatoes Recipe

Ingredients
  • salt & freshly ground black pepper .
  • freshly grated parmesan cheese, for serving .
  • 1/4 c extra-virgin olive oil .
  • 2 tbsps garlic, very finely sliced .
  • 1/4 c basil, shredded .
  • 1 lb spaghetti .
  • 1/2 lb thickly sliced pancetta, cut crosswise into 1/4-inch strips .
  • 1/4 c drained sun-dried tomatoes packed in oil, cut into strips .
  • 2 small red onions, sliced 1/4-inch thick

Directions
  • Step #1 Heat 2 tbsps of the olive oil In a large-ish skillet.
  • Step #2 Add pancetta & cook over med-heat/flame until softened but not browned, (about 3 mins).
  • Step #3 Using a slotted spoon, transfer the pancetta to a plate.
  • Step #4 Pour off all but 2 tbsps of fat from the skillet.
  • Step #5 Add the remaining 2 tbsps of olive oil & heat until shimmering.
  • Step #6 Add the onions & cook over medium-high heat until just beginning to brown (about 5 mins).
  • Step #7 Add the pancetta & sun-dried tomatoes & cook over med-heat/flame for 5 mins longer.
  • Step #8 Add the garlic & cook this until fragrant, about 1 min.
  • Step #9 Add the basil & season this with salt & pepper.
  • Step #10 Meanwhile, in a pot of boiling salted water, cook the spaghetti until al dente.
  • Step #11 Drain the spaghetti, reserving 1/2 c of the cooking water.
  • Step #12 Add the spaghetti to the skillet along with 1/4 c of the cooking water & toss over med-heat/flame until mixd.
  • Step #13 Transfer to a bowl & serve, passing the Parmesan at the table.
