Chicken Noodles - Pressure Cooker Recipe

Ingredients
  • salt & pepper, to taste .
  • 2 garlic cloves, sliced .
  • 1 c frozen peas .
  • 1 lb egg noodles, frozen such as Reames brand .
  • 1 lemon, juice of .
  • 1/4 c parsley, sliced .
  • 1 onion, sliced .
  • 8 boneless skinless chicken thighs .
  • 3 carrots, large dice .
  • 1 sprig fresh rosemary .
  • 8 c chicken stock .
  • 2 tbsps cornstarch .
  • 5 sprigs fresh thyme .
  • 3 stalks celery, finely sliced .
  • 1 bay leaf .
  • 1 tsp poultry seasoning .
  • 2 sprigs fresh sage .
  • 3 tbsps stock

Directions
  • Step #1 Saute onion, celery & garlic until lightly browned.
  • Step #2 Add chicken, chicken stock, bay leaf, carrot, herbs & seasonings, & put pressure cooker lid on.
  • Step #3 Bring to low pressure for 10 mins & remove this from the heat.
  • Step #4 Use a natural release method.
  • Step #5 Remove pressure cooker lid when safe to do so.
  • Step #6 Broth should still be boiling & chicken should be starting to fall apart.
  • Step #7 Return pot to burner over medium-high heat, add frozen egg noodles, & cook this until almost soft.
  • Step #8 When almost cooked, add cornstarch to chicken stock & stir this to make a slurry.
  • Step #9 Add some of the slurry to the pot, stirring until it starts to thicken.
  • Step #10 Remove sprigs of fresh herbs.
  • Step #11 Add peas & sliced parsley for color & juice of 1 lemon.
  • Step #12 Stir & serve.
