Rosalita's Arepas Con Queso Recipe

Ingredients
  • 1 c monterey jack cheese, grated .
  • 1-2 tbsp unsalted butter (for frying) .
  • 1/4 c sugar .
  • 1/4 c buttermilk .
  • 3/4 c whole milk .
  • 1/4 tsp salt .
  • 1 c frozen corn kernels, thawed .
  • 3 tbsps unsalted butter .
  • 1 c finely ground yellow cornmeal .
  • 6 slices mozzarella cheese (about 6 oz)

Directions
  • Step #1 In a medium saucepan, bring the milk to a boil over high heat.
  • Step #2 (Watch closely so it doesn't boil over).
  • Step #3 Remove from heat & let sit for a min.
  • Step #4 Stir in the 3 tbs of butter & the buttermilk.
  • Step #5 Stir until the butter has completely melted.
  • Step #6 Let mixture sit for about 2 mins.
  • Step #7 Pulse the corn kernels in a food processor/blender until just coarse.
  • Step #8 In a large bowl mix corn, cornmeal, salt, sugar, & Monterey Jack cheese.
  • Step #9 Stir to mix.
  • Step #10 Gradually add enough of the hot milk mixture to make a very thick batter.
  • Step #11 Heat griddle or large skillet over medium high heat, & melt 1-2 tbs of butter until the foam subsides.
  • Step #12 Drop about 2 tbs of batter into the skillet for each arepa.
  • Step #13 (They should be about 3 inches in diameter) Cook until underside is golden brown, about 4 mins, then flip & brown other side.
  • Step #14 When the arepas are cooked on both sides & the batter is cooked through, sandwich 1 slice of mozzarella cheese between 2 arepas.
  • Step #15 Reduce heat to low, & continue cooking just until the cheese melts, turning once or twice.
  • Step #16 Continue filling & cooking the remaining arepas.
  • Step #17 Best served hot.
