Step #1 Place the spinach in a microwave safe dish & microwave for 4-5 mins on high or until thawed.
Step #2 Drain & squeeze out excess liquid (I put the spinach in a collander & then use a spoon to press out the liquid).
Step #3 In a large bowl, butter, mix spinach, 1 egg, salt, garlic powder & 3/4 c bread crumbs.
Step #4 Mix well.
Step #5 Make balls from spinach mixture by taking a small amount of spinach & rolling in your hands.
Step #6 Make the balls 1 1/2 - 2 inches in diameter.
Step #7 Wet your hands under running cold water as you make the balls to keep the spinach from sticking to your hands (you'll need to rewet them every 2 or three balls).
Step #8 In a small bowl, mix 1 beaten egg & 1/4 c water.
Step #9 Beat well.
Step #10 In another small bowl, place approximately 1 c bread crumbs.
Step #11 Roll each spinach ball in the bread crumbs, then the egg/water mixture, then in the bread crumbs again.
Step #12 Add more water to the egg if you start to run out before you finish them all.
Step #13 In a large skillet, fry the spinach balls in butter until all sides are lightly browned.
Step #14 Use 1-2 tbsps of butter for each batch of balls, leaving enough room in the pan to move them around so they can be well browned.
Step #15 Place in a 9 x 11 baking dish or another similar dish with low sides.
Step #16 Freeze or refrigerator until ready to serve.
Step #17 Before serving, heat thawed spinach balls for 30 mins in a 350 degree oven.
