Mexican Lasagna Recipe

Ingredients
  • 2 c salsa .
  • 1 1/3 lbs ground turkey breast .
  • 2 tbsps chili powder .
  • 1 c taco sauce, medium .
  • 3 tbsps extra virgin olive oil .
  • 1/2 c red onions, sliced .
  • 1 c frozen corn kernels .
  • 1 (3 7/8 oz) can sliced ripe olives, drained .
  • 1 (4 oz) can sliced green chilies .
  • 2 1/2 c cheddar cheese or monterey jack pepper cheese, shredded .
  • 2 garlic cloves, minced .
  • 1 (15 oz) can black beans, drained .
  • 2 tsps cumin .
  • 8 burrito-size flour tortillas (I use Jalapeno-Cheddar)

Directions
  • Step #1 Preheat oven to 425F degrees.
  • Step #2 Preheat a large skillet over medium-high heat.
  • Step #3 Add 2 T olive oil.
  • Step #4 Add turkey & season this with chili powder, red onion, cumin, green chilies & garlic.
  • Step #5 Brown the meat, about 5-7 mins.
  • Step #6 Add salsa & taco sauce.
  • Step #7 Add black beans, corn & olives.
  • Step #8 Spice up with salt & let simmer the sauce for a few mins to take the raw edge off the spices & allow the flavors to meld.
  • Step #9 Coat a 9 x 13 baking dish with remaining olive oil.
  • Step #10 Cut the tortillas in half or quarters to make them easy to layer with.
  • Step #11 Build lasagna in layers of meat mixture, then tortillas, then cheese.
  • Step #12 Repeat: meat, tortilla, cheese again.
  • Step #13 Bake lasagna 12-15 mins until cheese is brown & bubbly.
