Coconut-fennel Cocktail Meatballs Recipe

Ingredients
  • 2 tbsps desiccated coconut .
  • 1/2 tsp ground dried chile .
  • 1 tsp cornflour .
  • 2 garlic cloves .
  • 1 tbsp soy sauce .
  • 120 ml coconut milk .
  • 1 tsp fennel seeds .
  • 2 tsps brown sugar .
  • 200 ml coconut milk .
  • 1 egg white .
  • 1 (400 g) can whole tomatoes, drained .
  • 150 g ground pork .
  • 2 tbsps peanut oil .
  • 1/2 sliced white onion .
  • 1 tsp fennel seeds .
  • 2 tbsps desiccated coconut .
  • 2 tbsps prepared chili sauce (Ayam brand, ginger & garlic) .
  • 200 g ground beef

Directions
  • Step #1 Put 120ml coconut milk, 2 tbsps dessicated coconut, 1 tsp fennel seeds, & 1/2 tsp ground chile into a small saucepan.
  • Step #2 Use crushed chile also if you like chili! Simmer it 5 mins, covered or partially covered.
  • Step #3 When it is quite cool, add 1 tsp cornflour, & mix it all with a spoon.
  • Step #4 Put the ground pork, the ground beef, egg white, the onion, garlic, soy sauce & brown sugar into a food processor/blender.
  • Step #5 Chop this, pulsing it several times.
  • Step #6 When it is nicely sliced, add half (60ml) of the coconut infusion that you have prepared.
  • Step #7 Blend this, whizzing it until the mixture is uniform throughout.
  • Step #8 Put this meat mixture into a bowl, & put in the fridge it for 1/2 hr or 1 hr, so that it is cool when you handle it.
  • Step #9 When the meat paste is quite cool, shape into small meatballs.
  • Step #10 Put the remaining 60ml of the coconut infusion into a large, wide pan.
  • Step #11 Add another 200ml coconut milk, 1 tsp fennel seeds, 2 tbsps peanut oil, 2 tbsps dessicated coconut, & 1 tbsp prepared chile sauce into the pan.
  • Step #12 Blend this with a spoon.
  • Step #13 Put the tomatoes from a can of drained, whole tomatoes into this sauce.
  • Step #14 Now, put the meatballs into the pan.
  • Step #15 Simmer this, covered, over low heat/flame, for about one hr.
  • Step #16 The sauce will cook down, & towards the end, the meatballs will brown in the oil that is in the mix.
  • Step #17 Allow to cool.
  • Step #18 Put these appetizer meatballs onto a serving dish with toothpicks.
