Keralan Vegetable Stew Recipe

Ingredients
  • 2 green chilies, slit in half .
  • 1 tsp black peppercorns, coarsely crushed .
  • 2 medium onions, sliced .
  • 2 tsps gingerroot, julienned .
  • 3 curry leaves .
  • 4 tbsps oil .
  • 4 whole green cardamoms .
  • 2 c water .
  • 4 whole cloves .
  • 2 c coconut milk .
  • 1 inch cinnamon sticks .
  • 4 c sliced mixed vegetables (potatoes, carrots, cauliflower, french beans, & green bell peppers) .
  • 1/2 tsp salt (to taste)

Directions
  • Step #1 Heat the oil in a pan on medium level till it is hot.
  • Step #2 Add the green cardamoms, cloves & cinnamon.
  • Step #3 Fry for a few seconds.
  • Step #4 Now add the green chilli(es), ginger & the sliced onions.
  • Step #5 Saute on medium heat for 2 min(s) or till the onions are transparent & soft.
  • Step #6 Add the mixed vegetables, curry leaves, salt & water.
  • Step #7 Cover up & cook on low heat for 15 mins or till the vegetables are cooked.
  • Step #8 Add the peppercorns & the coconut milk.
  • Step #9 Simmer on very low heat (so that the coconut milk does not curdle) for about 1 min(s).
  • Step #10 Serve with rice, coconut rice, or appam.
