Spring Pea-sto With Whole Wheat Penne Recipe

Ingredients
  • 1/4 c pine nuts, lightly toasted .
  • 1/4 c fresh tarragon leaves .
  • 10 oz whole wheat penne .
  • fresh ground pepper .
  • 1 c basil leaves, packed .
  • 1 tsp lemon peel, grated .
  • 1 (10 oz) package frozen peas, thawed .
  • salt .
  • 1/2 c parmigiano-reggiano cheese, plus more for serving .
  • 1/2 c extra-virgin olive oil

Directions
  • Step #1 Bring a large pot of water to boil, salt it & add the pasta.
  • Step #2 Cook until al dente.
  • Step #3 Drain, reserving a couple of ladlefuls of the pasta cooking water.
  • Step #4 In a food processor/blender, olive oil, puree half the peas with the basil, cheese, pine nuts, tarragon & lemon peel until coarsely sliced.
  • Step #5 Spice up with salt & pepper.
  • Step #6 In a large serving dish, pour 2/3 c reserved cooking water over the remaining peas, then stir in the the pea pesto.
  • Step #7 Add the pasta & toss to mix.
  • Step #8 Serve in bowls & pass extra cheese & pepper mill around the table.
