Ingredients

  • 4 (8 inch) flour tortillas .
  • 4-5 c corn flakes, coarsely crushed .

  • 1/2 tsp ground cinnamon .
  • 1/2 gallon French vanilla ice cream (please use the best quality you can find) .
  • sweetened whipped cream .
  • Cinnamon-Sugar Tortillas

Directions
  • Step #1 Place 8 scoops of ice cream on a baking sheet; freeze ice cream balls at least 1 hr or until firm.
  • Step #2 Combine crushed corn flakes & cinnamon in a shallow dish.
  • Step #3 Roll each ice cream ball in corn flake mixture, coating well.
  • Step #4 Place coated ice cream balls on baking sheet.
  • Step #5 Cover up & freeze several hrs or until very firm.
  • Step #6 Fry ice cream balls in deep hot oil (375 degrees) for 10 to 20 seconds, or until golden brown.
  • Step #7 Drain on paper towels, sweetened whipped cream, & serve as soon as possible with drizzled honey, & Cinnamon-Sugar Tortillas.
  • Step #8 RECIPE FOR CINNAMON-SUGAR TORTILLAS: Combine sugar & cinnamon, stirring well; set aside.
  • Step #9 Cut each tortilla into 4 wedges.
  • Step #10 Heat 1/2-inch of oil In a large-ish skillet to 350 degrees.
  • Step #11 Fry tortilla wedges, a few at a time, 1 min or until golden brown.
  • Step #12 Drain well on paper towels, sprinkle with sugar-cinnamon mixture.
