Beer Battered Catfish Recipe

Ingredients
  • 1/2 tsp salt .
  • 1/2 c cornstarch .
  • 1/2 tsp white pepper .
  • 1/2 c unsifted all-purpose flour .
  • 3/4 c beer, room temperature .
  • 1/2 tsp ground red pepper .
  • 1 tsp paprika .
  • 1/2 tsp dried oregano leaves, crushed .
  • 1 egg, lightly beaten .
  • vegetable oil (for frying) .
  • 1 tbsp garlic powder .
  • 1 tsp baking powder .
  • 2 tbsps cajun seasoning .
  • 1 lb catfish fillets, cut into 3- to 4-inch wide strips

Directions
  • Step #1 In a medium bowl, cornstarch, paprika, garlic powder, salt, baking powder, mix flour, Cajun seasoning, peppers, & oregano.
  • Step #2 Whisk in beer & egg until smooth.
  • Step #3 Add catfish.
  • Step #4 Cover up & put in the fridge for 1 to 2 hrs.
  • Step #5 In a deep skillet or large pan, pour vegetable oil to a 3-inch depth.
  • Step #6 Heat oil to medium-high heat on stovetop.
  • Step #7 When oil is hot, lift fish strips with tongs to drain excess batter.
  • Step #8 Fry catfish in oil, for approximately 3 mins per batch, several pieces at a time (being careful not to overcrowd), or until well browned on all sides.
  • Step #9 Drain on paper towels.
  • Step #10 Repeat with remaining catfish, keeping cooked fish warm until ready to serve.
