Polenta Dumplings With Pineapple Sambal Recipe

Ingredients
  • 1/2 small pineapple, peeled & cored .
  • For the dumplings .
  • 1 inch fresh ginger, sliced .
  • 400F g canned sliced tomatoes .
  • 250 g quick-cooking polenta mix .
  • 1 onion, sliced .
  • 1 large red chili, sliced .
  • 50 g creamed coconut .
  • 3 garlic cloves, sliced .
  • 2 tbsps sunflower oil .
  • 25 g butter .
  • For the sambal .
  • 1 tbsp sunflower oil .
  • 1 tbsp soft brown sugar

Directions
  • Step #1 Bring 1 litre of water to the boil in a pan & add the polenta.
  • Step #2 Stir for 3 - 4 mins then remove this from heat & cool.
  • Step #3 Chop the pineapple & set aside.
  • Step #4 In a large pan heat the 1 tbsp oil & fry the onion until soft & golden.
  • Step #5 Add giner, garlic & chilli & cook for 1 min.
  • Step #6 Add tomatoes, pineapple, sugar, 6 tbsp water & crumble in the coconut.
  • Step #7 Bring to boil & let simmer for 5 mins.
  • Step #8 Shape the polenta into golf balls & heat the 2 tsp of oil & the butter.
  • Step #9 Fry the balls in batches until crispy & golden.
  • Step #10 Serve the dumplings with the sambal garnished with pineapple leaves if desired.
