Lentil Pilaf Recipe

Ingredients
  • 4 garlic cloves, minced .
  • 1/4 tsp ground cumin .
  • 2 medium carrots, thinly sliced .
  • 1/4 tsp curry powder .
  • 1 c basmati rice, uncooked .
  • soy sauce .
  • 1/2 c dry white wine .
  • 1/3 c brown lentils, rinsed & picked over .
  • 1 bay leaf .
  • 2 stalks celery, thinly sliced .
  • 1/8 tsp hot pepper sauce .
  • 1/2 tsp dried basil .
  • 2 c vegetable stock .
  • 1 medium onion, thinly sliced .
  • 1/3 c canned black beans, rinsed & drained

Directions
  • Step #1 In a large non-stick skillet, bring the wine to a boil over medium-high heat.
  • Step #2 Add the garlic, carrots, onions, celery, rice & lentils.
  • Step #3 Cook, stirring often, for 2 mins.
  • Step #4 Add the black beans, cumin, basil, curry powder, hot pepper sauce & bay leaf.
  • Step #5 Cook, stirring often, for 2 mins.
  • Step #6 Add the stock & bring to a boil.
  • Step #7 Cover up & let simmer for about 15 mins or until the lentils & rice are tender.
  • Step #8 Remove & discard the bay leaf.
  • Step #9 Spice up with soy sauce to taste.
