1/4 c powdered sugar (can be more or less or left out completely) .
2 tsps vanilla .
1 c granulated sugar .
2 tsps baking powder .
13 oz jelly beans (can be more or less according to taste)
Directions
Step #1 Preheat the oven to 375°F.
Step #2 In a medium bowl add the butter & sugar & cream them together on medium speed until light & fluffy (about 2 mins).
Step #3 Add 1 egg & beat to incorporate, add 2nd egg & incorporate then add 3rd egg & incorporate (4th egg is used later).
Step #4 Beat in the vanilla then add the baking powder, salt & flour, beating on lowish speed until fully incorporated - you do not want to mix too long.
Step #5 Notice that the dough is very soft & sticky.
Step #6 Stir in the jelly beans.
Step #7 Using a spatula, scrape the dough out of the bowl onto a floured surface.
Step #8 Put flour on your hands & sprinkle flour on top of the dough.
Step #9 Then cut the dough in half.
Step #10 Next take one half & roll lightly back & forth making a thick rope - pick it up & place it on a cookie sheet with parchment paper.
Step #11 Don't be worried if the dough is so soft it bends when you pick it up.
Step #12 Once you place it on the parchment paper you can shape it a little more.
Step #13 Do the same with the second half.
Step #14 Flatten them out on top a little with your palm.
Step #15 Next beat one egg in a bowl & using a brush - brush them all over to coat them evenly.
Step #16 Then place this in your preheated oven for about 25 mins or until they are slightly golden brown.
Step #17 When done remove them from the oven.
Step #18 Let them cool for about 10-20 mins or until they are cool enough for you to handle.
Step #19 Place them on a breadboard & slice them crosswise on the diagonal into about 3/4 inch slices.
Step #20 Put them back on the cookie sheet (inside up) & bake for another 10-12 mins until the edges are turning slightly brown.
