Turkey Normandy Recipe

Ingredients
  • 1/2 tsp pepper .
  • 3 scallions, thinly sliced .
  • 1 lb ground turkey .
  • 2 tsps vegetable oil .
  • 1/4 tsp dried sage .
  • 3/4 c chicken stock .
  • 2 tbsps fresh parsley, sliced .
  • 3 tbsps apple juice or brandy .
  • 3 tbsps sour cream .
  • 2 apples, peeled, cored & thinly sliced .
  • 1 tsp flour

Directions
  • Step #1 In a large skillet, heat the oil over moderate heat.
  • Step #2 Cook the turkey until no longer pink.
  • Step #3 Drain & transfer to a plate.
  • Step #4 Add the scallions to the pan & cook for 1 min or until tender.
  • Step #5 Add the apples & sauté for 5 mins or until lightly browned.
  • Step #6 Remove the pan from the heat & add the apple juice or brandy.
  • Step #7 Return the pan to the heat & cook this until the liquid has evaporated.
  • Step #8 Add broth to the pan along with the sage.
  • Step #9 Bring to a boil.
  • Step #10 Reduce heat to a simmer, return the turkey to the pan & cook for 5-7 mins or until heated through.
  • Step #11 In a small bowl, whisk together the sour cream & the flour.
  • Step #12 Stir it into the pan & let simmer, stirring constantly, for 2 mins or until thickened.
