Saumons Smoked En Pâte Feuilletée Recipe

Ingredients
  • 4 oz creme fraiche or sour cream .
  • 2 oz black caviar (See tip below) .
  • 1/2 fennel bulb, Sliced .
  • 12 prepared puff pastry shells, c .
  • 1/4 c soy sauce .
  • 2 medium white potatoes, cubed .
  • 1 (5 oz) package smoked salmon .
  • 1/4 c heavy cream .
  • 1/2 c coconut milk .
  • 2 tbsps unsalted butter .
  • 1 tbsp vegetable oil or peanut oil

Directions
  • Step #1 Marinate salmon in soy sauce & coconut milk for 1 hr.
  • Step #2 Meanwhile, lightly saute fennel in oil.
  • Step #3 Remove from saute pan & drain on paper towels.
  • Step #4 Cook potatoes, add fennel, & place this in food processor/blender, drain, till tender, butter & cream Blend well.
  • Step #5 Break marinated smoked salmon into bits about ½ inch.
  • Step #6 Pipe potato mixture into prepared puff pastry shells, filling about ½ way.
  • Step #7 Place the ½ inch chunk of smoked salmon on top of potatoes, pipe another thin layer of potatoes over salmon.
  • Step #8 Broil until golden on top.
  • Step #9 Remove from broiler & top this with ¼ t of caviar.
  • Step #10 Transfer to serving platter & serve while still warm.
  • Step #11 Serve with creme fresch or sour cream if desired.
  • Step #12 Tip, you can buy 2 oz caviar on Amazon for about 4-5 dollars.
