Chicken Rotini Stovetop Casserole Recipe

Ingredients
  • 2 c half-and-half cream
  • 1/2 tsp sliced fresh chives
  • 1/2 green bell pepper, sliced
  • 1/2 tsp dried basil leaves
  • 4 skinless, boneless chicken breast halves - cubed
  • 2/3 c freshly grated Parmesan cheese
  • 1/2 red bell pepper, sliced
  • 1/2 c butter
  • 1/2 tsp sliced fresh parsley
  • 1 (12 oz) package rotini pasta
  • 1/2 tsp dried oregano

Directions
  • Step #1 Bring a large pot of lightly salted water to a boil.
  • Step #2 Add pasta, & cook for 8 to 10 mins, or until al dente; drain.
  • Step #3 Combine half-and-half & butter in a saucepan over med-heat/flame.
  • Step #4 Boil carefully, stirring, until mixture has reduced to 1 1/2 to 1 2/3 c.
  • Step #5 Remove pan from heat; whisk in cheese, chives, basil, oregano, & parsley.
  • Step #6 Cover, & set aside.
  • Step #7 Saute chicken in a large skillet until lightly browned on both sides.
  • Step #8 Stir in green & red bell pepper, & cook this until vegetables are tender, & chicken is no longer pink in the middle.
  • Step #9 In a casserole dish, chicken mixture, mix the hot cooked pasta, & sauce.
  • Step #10 Mix well, & serve as soon as possible.
