Persian Slow-cooked Chicken Recipe

Ingredients
  • 8 skinless chicken thighs .
  • 1 large onion, sliced .
  • 450 ml chicken stock (made from 2 chicken Oxo cubes) .
  • 2 tbsps olive oil .
  • 2 tbsps all-purpose flour .
  • 2 tsps paprika .
  • 2 garlic cloves, sliced .
  • pepper .
  • 2 tsps turmeric .
  • 1 inch piece fresh ginger, finely sliced .
  • 4 cloves

Directions
  • Step #1 Slash each piece of chicken 2 or 3 times with a sharp knife.
  • Step #2 Mix the flour, turmeric & paprika in a small plastic bag.
  • Step #3 Shake the chicken pieces in it to coat them thinly.
  • Step #4 Heat the oil in a frying pan, add the chicken & cook this until browned on all sides.
  • Step #5 Transfer to a plate.
  • Step #6 Add the onion & garlic to the frying pan & fry, stirring for 5 mins until lightly browned.
  • Step #7 Stir in the remaining spiced flour & stir in theto the onion & garlic mixture.
  • Step #8 Add the cloves, ginger & some pepper.
  • Step #9 Pour in & slowly incorporate the stock.
  • Step #10 Bring to the boil stirring.
  • Step #11 Pack the chicken joints into the slow cooker (aka crockpot) & pour in the hot stock mixture.
  • Step #12 Cover up with the lid.
  • Step #13 Cook on high for 2 hrs, then on medium for another 4 hrs (or on medium for longer).
