Spinach And Chickpea Curry Recipe

Ingredients
  • 1/2 tsp turmeric .
  • 1/2 tsp dried chili pepper flakes, crushed .
  • 250 g spinach .
  • 2 tsps ground coriander .
  • 1/2 lemon, juice of .
  • 800 g tinned chickpeas, rinsed & drained .
  • 400F g canned tomatoes .
  • 2 tbsps vegetable oil .
  • 2 tsps ground cumin .
  • 2 onions, sliced

Directions
  • Step #1 Heat the oil & carefully fry the onions for 10 mins.
  • Step #2 Add the spices, stir well & cook for a further 2 mins.
  • Step #3 Add tomatoes & chickpeas & let simmer for 25 mins.
  • Step #4 Increase the heat & stir in the the spinach & lemon juice.
  • Step #5 When the spinach has wilted - serve.
