Winter Vegetable Au Gratin Recipe

Ingredients
  • 2 tbsps butter .
  • salt & pepper .
  • 1 tsp fennel seeds .
  • 1 onion, sliced .
  • 3 tbsps sliced parsley .
  • 4 c of winter vegetables (carrots, turnip, celery, parsnip, sweet potato) .
  • 2 c old cheddar cheese .
  • 2 tbsps butter .
  • 2 garlic cloves, sliced .
  • 2 slices whole wheat bread, sliced

Directions
  • Step #1 melt butter.
  • Step #2 Cook all vegetables 3-5 min.
  • Step #3 Add Salt & pepper & transfer to ovenproof bowl.
  • Step #4 Combine cheese, butter, crumbs & parsley.
  • Step #5 Top vegetables evenly with cheese mixture.
  • Step #6 Bake 15 mins or until vegetables are tender & topping is golden.
  • Step #7 This dish can be prepared ahead of time & reheated just before serving.
