Pork Tenderloin With Pomegranate Glaze Recipe

Ingredients
  • 1/4 tsp pepper .
  • 1/4 c sugar .
  • 2 c pomegranate juice .
  • 2 (3/4 lb) pork tenderloins, trimmed .
  • 1/2 tsp salt

Directions
  • Step #1 Preheat oven to 450.
  • Step #2 Combine juice & sugar in a med saucepan over med heat, & bring to a boil.
  • Step #3 Cook til reduced to 1/2 c, about 8 min Pour half of glaze into a small bowl & set aside.
  • Step #4 Sprinkle top pork with salt & pepper.
  • Step #5 Place pork on the rack of a broiler pan coated with cooking spray.
  • Step #6 Brush pork with half of the glaze in the saucepan.
  • Step #7 Bake at 450 for 15 min or til it registers 145 degrees.
  • Step #8 Baste pork with remaining glaze in saucepan; cook an extra 5-7 min or til it registers 155 degrees.
  • Step #9 Remove pork from oven; baste with half the glaze in the bowl.
  • Step #10 Let pork stand 10 min Cut pork across grain into thin slices.
  • Step #11 Serve with remaining glaze in bowl.
