Creole Pork And Veal Stew Recipe

Ingredients
  • 1/4 tsp cayenne pepper .
  • 2 tsps salt .
  • 1 lb pork, cut into small pieces .
  • 1 1/3 c cold water .
  • 2/3 c tomato juice .
  • 1/2 c celery, sliced .
  • 1 tsp dried thyme, crumbled .
  • 2 lbs veal stew meat .
  • 1/2 c flour .
  • 3 garlic cloves, minced .
  • 1/2 c vegetable oil .
  • 1 onion, finely sliced .
  • 1/2 green pepper, finely sliced .
  • 1/4 tsp black pepper

Directions
  • Step #1 Spice up veal & pork with salt, pepper, & cayenne.
  • Step #2 In a large Dutch oven, heat oil over med-heat/flame.
  • Step #3 When oil is hot, stir flour in slowly.
  • Step #4 Lower heat.
  • Step #5 It is very important that you keep stirring constantly.
  • Step #6 After all of the flour has been mixd with the oil, turn the heat down very low & cook this until golden brown, still stirring constantly.
  • Step #7 Add seasoned meat to the roux & let simmer, uncovered over med-heat/flame, turning every once in awhile until browned on all sides (15 mins).
  • Step #8 Add celery, thyme, garlic, onion, & green pepper, & sauté until onion is wilted (5 mins).
  • Step #9 Add tomato juice & water, & mix well.
  • Step #10 Let cook overlow heat until meat is tender (30 mins).
  • Step #11 Serve over rice.
