Summer Asparagus Recipe

Ingredients
  • 2 lbs asparagus, trimmed (stem ends peeled, if thick) .
  • 1 tbsp sliced fresh chervil .
  • 1 tbsp red wine vinegar .
  • 3/4-1 lb grape tomatoes, halved .
  • 1/8 tsp black pepper .
  • 1 tbsp balsamic vinegar .
  • 1/2 c olive oil .
  • 1 tsp finely sliced shallots .
  • 1/8 tsp salt .
  • 3-4 oz feta cheese, crumbled .
  • 2 tsps Dijon mustard

Directions
  • Step #1 In a small bowl, whisk balsamic & red wine vinegars, Dijon mustard, salt & pepper.
  • Step #2 Slowly whisk in oil in a thin stream.
  • Step #3 Stir in chervil & shallots.
  • Step #4 Cover up & set aside until ready to use.
  • Step #5 Steam asparagus until tender, about 6 mins.
  • Step #6 Arrange asparagus & tomatoes on a large platter.
  • Step #7 Sprinkle top with feta cheese.
  • Step #8 Drizzle with half of the dressing.
  • Step #9 Serve the remaining dressing on the side.
  • Step #10 Note: This may be served warm, room temperature or chilled.
