Tina's Overnight Sausage & Egg Casserole Recipe

Ingredients
  • 8 oz lean sausage meat, cooked, drained of fat (such as Jimmy Dean) .
  • 1-2 c low-fat cheddar cheese, shredded .
  • salt, to taste .
  • 6 slices bread .
  • 2 large eggs .
  • pepper, to taste .
  • 1-2 tbsp reduced fat margarine, at about room temp (such as Smart Balance) .
  • 1 1/2 c skim milk

Directions
  • Step #1 Grease an 8x8" square glass baking dish & preheat your trusty oven to 350°F.
  • Step #2 Butter each slice of bread on 1 side only.
  • Step #3 Place the bread slices inthe bottom of the pan, cutting to fit in 1 even layer, buttered sides facing up.
  • Step #4 Sprinkle top with cooked sausage & cheese.
  • Step #5 Layer the next 3 slices of bread on top, butter side up again.
  • Step #6 Mix eggs & milk together, adding some salt & pepper to taste, & pour over the bread.
  • Step #7 Press the bread down lightly with your fingers to ensure that everything is moistened.
  • Step #8 Cover up with foil wrap & chill overnight.
  • Step #9 Bake at 350 F for about 45 mins to 1 hr, or untilt he top is puffed & lightly browned.
  • Step #10 Cut into slices & serve.
