Pineapple Shrimp Recipe

Ingredients
  • 1 tbsp reduced sodium soy sauce .
  • 1 medium zucchini, cut into 1/4-inch slices (2 c) .
  • 1 medium onion, sliced .
  • hot cooked rice, if desired .
  • 3/4 lb uncooked medium shrimp, in shells .
  • 1 garlic clove, finely sliced .
  • 1/4 tsp ground ginger .
  • 1 tbsp cornstarch .
  • 1 tsp sugar .
  • 2 medium tomatoes or roma tomatoes, cut into wedges .
  • 2 tbsps cold water .
  • 8 oz pineapple chunks in juice, drained & juice reserved

Directions
  • Step #1 Peel shrimp.
  • Step #2 Make a shallow cut lenghtwise down back of shrimp; wash out vein.
  • Step #3 Add enough water to reserved pineapple juice to measure 1/2 c.
  • Step #4 Mix cornstarch & cold water.
  • Step #5 Spray 10-inch nonstick skillet or wok with nonstick cooking spray; heat over medium-high heat.
  • Step #6 Add shrimp, garlic, onion & zucchini; stir-fry about 3 mins or until shrimp are pink & vegies are crisp-tender.
  • Step #7 Stir in pineapple juice, soy sauce, sugar & ginger.
  • Step #8 Heat to boiling.
  • Step #9 Stir in cornstarch mixture.
  • Step #10 Cook & stir about 10 seconds or until thickened.
  • Step #11 Stir in pineapple & tomatoes; heat just until hot.
  • Step #12 Serve with rice.
