Disney's 50's Primetime Cafe Chicken Pot Pie Recipe

Ingredients
  • 1/2 c celery, cubed .
  • 3 tbsps butter .
  • 2 chicken bouillon cubes .
  • 1 egg, beaten .
  • 1/2 c carrots, cubed .
  • 2 c chicken tenderloins, uncooked .
  • 3 c milk or half-and-half .
  • 1/4 c leeks, sliced .
  • 1 pastry for double-crust pie .
  • 1 c parmesan cheese, grated .
  • 1 c broccoli, tops only .
  • 3 tbsps flour

Directions
  • Step #1 Preheat oven to 400F degrees.
  • Step #2 In boiling salted water, & leeks until chicken is fully cooked & vegetables are tender, broccoli, celery, simmer chicken tenderloins, carrots, but still firm (about 15 mins).
  • Step #3 Drain well & set aside.
  • Step #4 In a medium sized skillet, melt butter & add flour.
  • Step #5 Cook for 5 mins & add milk or half-and-half.
  • Step #6 Bring to a boil & let simmer until thickened (about 10 mins).
  • Step #7 Dissolve chicken bouillon cubes in 1/4 c warm water & add to sauce.
  • Step #8 Blend in grated Parmesan che3ese & remove this from heat.
  • Step #9 Add cooked chicken & vegetables & mix well.
  • Step #10 Pour mixture into a deep-dish pie plate & cover with pie dough.
  • Step #11 Seal edges well & brush top this with beaten egg.
  • Step #12 Bake until crust is golden brown & the filling is hot (about 45 to 50 mins).
  • Step #13 Brushing a little milk on the top of the pie dough before baking will give the crush a delightful color.
