Halibut In Wine Parsley Sauce Recipe

Ingredients
  • 1 c Gewurztraminer wine or other fairly sweet white wine .
  • 2 tbsps fresh lemon juice .
  • 2 tsps capers .
  • 1 garlic clove, minced .
  • 1 pinch cayenne .
  • 2 tbsps olive oil .
  • 1/3 c sliced fresh parsley .
  • 1 tsp grated lemon rind .
  • 4 halibut fillets, 1 inch thick (or sea bass fillets) .
  • 1 tbsp butter

Directions
  • Step #1 Sprinkle top cayenne over fillets.
  • Step #2 Heat oil in large frying pan over med-heat/flame, add halibut & cook for 5 mins.
  • Step #3 Carefully turn fish over & add in the remaining ingredients, except the butter.
  • Step #4 Cook for a further 5-7 mins or until fish is cooked.
  • Step #5 Remove fish from pan & cover with foil wrap.
  • Step #6 Increase heat to high & cook sauce until it is slightly thickened.
  • Step #7 Stir in butter until melted, pour over fish & serve as soon as possible.
