Lentil Barley Stew Recipe

Ingredients
  • 1 tsp minced garlic .
  • 1/4-1/2 tsp crushed red pepper flakes .
  • salt (to taste) .
  • 3/4 c lentils .
  • 3/4 c barley .
  • pepper (to taste) .
  • 1 tsp italian seasoning .
  • 2-4 tbsps butter (or margarine) .
  • 28 oz canned crushed tomatoes .
  • 3/4 c sliced celery .
  • 6 c water (or stock) .
  • 3/4 c sliced onions .
  • 1/2 c shredded carrots

Directions
  • Step #1 Saute celery, garlic & onion in butter In a large-ish pan (I use a 5-qt dutch oven).
  • Step #2 Add water or stock & lentils.
  • Step #3 Bring to a boil & then simmer for 20 mins.
  • Step #4 Add tomatoes, barley, carrots & seasonings.
  • Step #5 Simmer for 45-60 mins, till barley & lentils are tender, adding more stock if necessary.
