Jamaican Jerk Chicken Nuggets Recipe

Ingredients
  • 1/4 c vegetable oil .
  • 2 tbsps garlic powder .
  • 2 jalapeno peppers, seeded & finely sliced .
  • 1 large yellow onion, finely sliced .
  • 3/4 tsp ground nutmeg .
  • 1 1/2 tsps cayenne pepper .
  • 3 tbsps fresh lime juice .
  • 1/4 c soy sauce .
  • 5 lbs chicken breasts, cut into 1-inch cubes .
  • 2 tbsps sea salt .
  • 1 tbsp ground thyme .
  • 3/4 tsp ground cinnamon .
  • 3/4 c white vinegar .
  • 3 green onions, finely sliced .
  • 1 tbsp sugar .
  • 1 tbsp ground allspice .
  • 1 1/2 tsps fresh coarse ground black pepper .
  • 1 1/2 tsps ground sage .
  • 1/2 c orange juice

Directions
  • Step #1 Combine all ingredients except chicken in 9x13 deep cake pan or casserole, mixing each ingredient as it is added.
  • Step #2 Add chicken to mixture, mixing well, making sure all pieces are well coated Press chicken firmly in pan, allowing ingredient mixture to cover all pieces of chicken.
  • Step #3 Cover up & put in the fridge for up to 2-24 hrs.
  • Step #4 Bake covered @ 375 for one hr.
  • Step #5 Remove cover & bake @ 400F for 30 extra mins.
  • Step #6 Mix well after removing from oven, drain, & serve hot, with red beans & rice.
