Barefoot Contessa's Strawberry Scones Recipe

Ingredients
  • sugar, for sprinkling .
  • 2 tsps salt .
  • 2 tbsps baking powder .
  • 2 tbsps water or milk, for egg wash .
  • 1 egg, beaten with .
  • 4 extra-large eggs, lightly beaten .
  • 3/4 lb cold unsalted butter, sliced .
  • 2 tbsps sugar, plus extra .
  • 1 c cold heavy cream .
  • 3/4 c small-sliced dried strawberries .
  • 4 c all-purpose flour .
  • 1 tbsp all-purpose flour

Directions
  • Step #1 Preheat the oven to 400F degrees F.
  • Step #2 In the bowl of an electric mixer fitted with a paddle attachment, 2 tbsps sugar, baking powder, mix 4 c of flour, & salt.
  • Step #3 Blend in the cold butter at the lowest speed & mix until the butter is in pea-sized pieces.
  • Step #4 Combine the eggs & heavy cream & quickly add them to the flour & butter mixture.
  • Step #5 Combine until just mixed.
  • Step #6 Toss the strawberries with 1 tbsp of flour, add them to the dough, & mix quickly.
  • Step #7 The dough may be a bit sticky.
  • Step #8 Dump the dough out onto a well-floured surface & be sure it is well mixd.
  • Step #9 Flour your hands & a rolling pin & roll the dough 3/4-inch thick.
  • Step #10 You should see lumps of butter in the dough.
  • Step #11 Cut into squares with a 4-inch plain or fluted cutter, & then cut them in half diagonally to make triangles.
  • Step #12 Place on a baking sheet lined with parchment paper.
  • Step #13 Brush the tops with egg wash.
  • Step #14 Sprinkle top with sugar & bake for 20 to 25 mins, until the outsides are crisp & the insides are fully baked.
