Lobster Bisque Recipe

Ingredients
  • 1 c cream (scalded) .
  • 2 c chicken broth, Cold .
  • 3 tbsps butter .
  • 3 tbsps flour .
  • 1 pinch cayenne .
  • 2 lbs lobsters, Boiled .
  • 1 1/2 tsps salt .
  • 2 c milk

Directions
  • Step #1 Remove the meat from lobster shell.
  • Step #2 Dice body meat.
  • Step #3 Chop claw & tail meat fine.
  • Step #4 Add broth to body bones & tough ends of claws, cut in pieces; bring slowly to boiling point & cook 20 mins.
  • Step #5 Drain, reserve liquid.
  • Step #6 Heat butter, add flour & seasoning, & slowly the liquid.
  • Step #7 Scald milk & stir in the slowly.
  • Step #8 Add lobster meat & cook slowly for 5 mins,.
  • Step #9 add cream & serve at once.
