Yukon Gold Gratin With Chilies, Cilantro And Cheese Recipe

Ingredients
  • 2 tsps minced garlic .
  • 2 c chicken broth (canned low-salt) .
  • 4 large poblano chiles .
  • 1/2 c crumbled queso anejo or romano cheese .
  • 3 1/2 lbs medium yukon gold potatoes or russet potatoes (peeled, cut into 1/8-inch-thick slices) .
  • 2 c whipping cream .
  • extra sliced fresh cilantro .
  • 1 1/2 c shredded monterey jack cheese .
  • salt .
  • 3/4 c cilantro (coarsely sliced fresh cilantro) .
  • pepper

Directions
  • Step #1 Preheat oven to 400°F Char chilies over gas flames or in broiler until blackened on all sides.
  • Step #2 Enclose in paper bag; let this stand 10 mins.
  • Step #3 Peel, seed & chop chilies.
  • Step #4 Butter 13x9x2-inch glass baking dish.
  • Step #5 Sprinkle top garlic over bottom of dish.
  • Step #6 Arrange 1/4 of potatoes in dish.
  • Step #7 Sprinkle top with salt & pepper, then with 1/3 of chilies & 1/3 of cilantro.
  • Step #8 Repeat layering of potatoes, chilies & cilantro 2 more times, seasoning potatoes with salt & pepper.
  • Step #9 Top with potatoes.
  • Step #10 Pour broth over, then cream.
  • Step #11 Sprinkle top with salt & pepper.
  • Step #12 Tent dish with foil wrap.
  • Step #13 Bake until potatoes are tender, about 1 hr 15 mins.
  • Step #14 Uncover.
  • Step #15 Sprinkle top cheeses over potatoes.
  • Step #16 Bake until liquid thickens, about 15 mins.
  • Step #17 Cool slightly.
  • Step #18 Sprinkle top with cilantro.
