Homemade Southern Banana Pudding
Ingredients
3 tbsps butter .
1 pinch salt .
1/2 tsp cream of tartar .
1/3 c cornstarch .
3/4 c sugar .
1 tbsp sugar .
4 ripe bananas, thinly sliced .
3 c milk .
8 eggs, separated .
3 c vanilla wafers .
1 tbsp pure vanilla extract
Directions
Step #1 Preheat oven to 350ºF.
Step #2 In a large saucepan, mix 1/3 c sugar, cornstarch & salt; stir until mixed.
Step #3 Mix in milk.
Step #4 Cook over med-heat/flame, stirring constantly until thickened & boiling.
Step #5 Boil 1 min, then remove this from heat.
Step #6 In a small bowl, whisk egg yolks, then whisk in about 1/2 c of hot custard until mixed.
Step #7 Pour yolk mixture back into saucepan of custard; cook over med-heat/flame, stirring 2 mins.
Step #8 Stir in butter & vanilla until mixed.
Step #9 Place vanilla wafers on bottom of a shallow 2 quart casserole dish.
Step #10 Top with layers of banana slices & custard.
Step #11 Repeat layering, ending with custard.
Step #12 In a large mixing bowl, best egg whites & 1/4 c sugar at lowish speed until frothy.
Step #13 Add cream of tartar; increase speed to medium & slowly beat in remaining sugar.
Step #14 Beat until egg whites hold stiff peaks.
Step #15 Spoon meringue over hot custard as soon as possible, making sure that meringue touches baking dish on all sides.
Step #16 (This prevents it from shrinking).
Step #17 Transfer to oven & bake this until golden brown, about 20 mins.
Step #18 Remove pudding from oven & cool one hr.
Step #19 Refrigerate at least 4 hrs before.
