Peanut Brittle Deluxe Recipe

Ingredients
  • 1 1/2 c salted peanuts .
  • 1 c dark corn syrup .
  • 2 tbsps butter .
  • 2 tsps baking soda .
  • 2 c sugar .
  • 1 tsp vanilla .
  • 1/4 c water

Directions
  • Step #1 Oil a large rimmed cookie sheet or jelly roll pan.
  • Step #2 Set aside.
  • Step #3 In a 3-quart saucepan mix sugar, corn syrupand water; mix well.
  • Step #4 Cook over med-heat/flame, stirring constantly until the sugar dissolves.
  • Step #5 Cook until temperature reaches 285°F on a candy thermometer, stirring frequently to prevent burning.
  • Step #6 Add peanuts & butter; stir contantly & cook to 295°F.
  • Step #7 Remove from heat.
  • Step #8 Add vanilla & soda & stir well.
  • Step #9 Pour onto cookie sheet & spread as thinly as possible.
  • Step #10 When set, loosen from pan & flip over.
  • Step #11 Stretch & pullout the brittle until rather thin.
  • Step #12 When cold, break into pieces.
