Chinese-style Skewered Chicken Recipe

Ingredients
  • 1 tbsp minced fresh ginger .
  • 8 (10 inch) bamboo skewers .
  • 2 lbs boneless chicken breasts .
  • hot cooked rice .
  • 1/4 c firmly packed light brown sugar .
  • 1 tbsp olive oil .
  • 1 (8 oz) can tomato sauce .
  • 2 medium green bell peppers (cubed) .
  • 2 medium onions (cubed) .
  • 1 tsp minced garlic .
  • 1/4 c soy sauce

Directions
  • Step #1 In a bowl, sugar, mix the tomato sauce, soy sauce, ginger & garlic.
  • Step #2 Stir in the chicken.
  • Step #3 Cover up & put in the fridge 2 to 8 hrs.
  • Step #4 Heat the broiler.
  • Step #5 Skewer the chicken & broil 7 to 10 mins or until lightly browned.
  • Step #6 Turn & broil 7 mins longer or to desired doneness.
  • Step #7 Meanwhile, in a medium skillet, saute the bell peppers & onions in the olive oil for 5 mins.
  • Step #8 Serve the chicken & vegetables over the rice.
