Fettuccine With Sambuca & Cranberries Recipe

Ingredients
  • 3 c whipping cream .
  • 1/4 tsp nutmeg .
  • orange zest (to garnish) .
  • 1 lb fettuccine pasta .
  • 2 garlic cloves, minced .
  • salt & pepper .
  • fresh parsley, sliced for garnish .
  • 1/4 c orange juice concentrate .
  • 1/2 c parmesan cheese, freshly grated .
  • 1/4 c butter .
  • 3 oz dried cranberries .
  • 1/4 c sambuca liqueur .
  • 1 (14 oz) can artichokes, drained & sliced (10-12 count) .
  • 2 whole boneless skinless chicken breasts, cubed

Directions
  • Step #1 In a large frying pan, heat butter & saute cubed chicken & garlic until barely cooked (do NOT over cook!).
  • Step #2 Remove chicken from pan & set aside.
  • Step #3 Add whipping cream, sambuca & orange juice to pan & stir well.
  • Step #4 Add parmesan, nutmeg, salt & pepper, stirring until smooth.
  • Step #5 Simmer for 5 mins.
  • Step #6 Add sliced artichokes, cranberries & chicken; simmer & stir for 10 mins.
  • Step #7 Cook fettucine according to package directions.
  • Step #8 Carefully fold sauce into pasta & garnish with parsley & orange zest.
