Tarragon Cream Chicken Recipe

Ingredients
  • 2 tbsps butter .
  • 1 c chicken stock .
  • 1/2 c dry white wine .
  • 1/2 lb mushrooms, such as chanterelles, sliced .
  • 2 tbsps sliced fresh tarragon .
  • salt & freshly ground black pepper .
  • 1 c creme fraiche .
  • fresh tarragon sprigs (to garnish) .
  • 2 garlic cloves, finely sliced .
  • 1 tbsp canola oil .
  • 1 tsp herbes de provence .
  • 4 chicken breast halves, on the bone

Directions
  • Step #1 Melt the butter wiht the oil in a flameproof casserole, add the chicken, & brown on all sides.
  • Step #2 Cover up with the mushrooms, & sprinkle with the dried herbs, garlic & salt & pepper to taste.
  • Step #3 Add the stock & wine & bring to a boil.
  • Step #4 Cover up & let simmer carefully for 25 mins or until the chicken is tender.
  • Step #5 Lift out the chicken & mushrooms & set aside, then boil the sauce until reduced by about half.
  • Step #6 Add the creme fraiche & sliced tarragon & stir until thickened.
  • Step #7 Taste & adjust seasoning if necessary.
  • Step #8 Serve the chicken sliced off the bone, coated with mushrooms & sauce, garnished with tarragon sprigs.
