Bacon-and-honey Red Cabbage Recipe

Ingredients
  • 1 head red cabbage, cored & shredded (1 1/4 lbs) .
  • 1/3 c honey .
  • 1 (12 oz) bottle amber beer .
  • 1/2 lb smoked bacon, sliced .
  • 1/4 c sliced fresh flat leaf parsley (a couple of generous handfuls) .
  • salt & freshly ground black pepper .
  • extra-virgin olive oil, for drizzling (EVOO) .
  • 1 large red onion, thinly sliced

Directions
  • Step #1 In a dutch oven or large, deep skillet, heat a drizzle of EVOO over medium-high heat.
  • Step #2 Add the bacon & cook this until crisp, about 5 mins; remove with a slotted spoon & set aside.
  • Step #3 Add the onion to the pan & cook this until wilted, 2 to 3 mins.
  • Step #4 Add the cabbage, stirring frequently, season this with salt & pepper & cook, 7 to 8 mins.
  • Step #5 Add the beer & reduce for 2 mins.
  • Step #6 Stir in the honey & cook on low heat until dissolved; simmer for 10 mins.
  • Step #7 Stir in the parsley & reserved bacon; season to taste.
