Gypsy Chicken Recipe

Ingredients
  • 4 tbsps olive oil .
  • 1 (8 oz) can tomato sauce .
  • 1 bay leaf .
  • 3 medium green peppers, sliced .
  • salt & pepper .
  • 1 tsp gumbo file .
  • 1 (1 lb) can whole tomatoes, sliced .
  • 1 dash hot pepper sauce .
  • 1 medium onion, sliced .
  • 1/2 tsp thyme .
  • 1 garlic clove, crushed .
  • 1/2 c sliced black olives .
  • 2 lbs chicken breasts or chicken thighs, cut into byte sized pieces .
  • 2 tbsps worcestershire sauce

Directions
  • Step #1 Pour 2 Tablespoons of olive oil in the pan & cook the chicken until the juice runs clear.
  • Step #2 Remove from pan, let cool slightly in a bowl.
  • Step #3 Saute the green peppers, onion, & garlic in the other 2 Tablespoon of olive oil until vegetables are tender but dont over cook them.
  • Step #4 Add thyme, & Worcestershire, gumbo file, hot pepper sauce, bay leaf, & season to taste with salt & pepper.
  • Step #5 Cook 15 mins.
  • Step #6 Add chicken & cook another 10 mins.
  • Step #7 Lastly, add olives & heat through.
  • Step #8 Serve over rice.
