3 large kale leaves, stems & inner ribs discarded, leaves coarsely sliced .
1/2 lb turkey sausage .
1 1/2 oz parmesan cheese
Directions
Step #1 Preheat the broiler & position the rack 8 inches from the heat.
Step #2 Crack the eggs into a large bowl.
Step #3 Add 2 tbsps of grated Parmesan, season generously with salt & pepper & beat the eggs until mixed.
Step #4 In a large nonstick ovenproof skillet, heat 1 tsp of the olive oil.
Step #5 Add the sausage meat & onion & cook over moderately high heat, breaking the sausage up into small pieces, until browned & cooked through, about 5 mins.
Step #6 Transfer to a plate.
Step #7 Add 2 tbsps of the olive oil to the skillet & heat until shimmering.
Step #8 Add the potatoes & cook over moderately high heat, stirring every once in awhile, until crisp & cooked through, about 5 mins.
Step #9 Add the kale, tossing, until softened, season this with salt & cook, about 2 mins longer.
Step #10 Add the remaining 1 tbsp of olive oil to the skillet & tilt the skillet to swirl the oil around the sides.
Step #11 Scatter the sausage & onion in the skillet.
Step #12 Stir the eggs & add them to the skillet.
Step #13 Cook over moderate heat for 1 min.
Step #14 Gently lift the edge of the frittata & tilt the pan, allowing some of the uncooked egg to seep underneath.
Step #15 Cook until the bottom & sides are barely set, about 3 mins.
Step #16 Sprinkle top the remaining 2 tbsps of grated Parmesan on top & broil until the eggs are set & the top of the frittata is lightly browned, 1 to 2 mins longer.
Step #17 Slide the frittata onto a large plate, cut into wedges & serve hot or warm.
