Planked Salmon With Basil Chive Butter Recipe

Ingredients
  • 24 oz salmon fillets .
  • 3/4 tsp sea salt .
  • sea salt .
  • 1/4 tsp fresh ground black pepper .
  • Salmon .
  • 1 tbsp olive oil .
  • Basil Chive Butter .
  • 2 tbsps unsalted butter, melted .
  • 1/4 c packed fresh basil leaves .
  • 1 tbsp fresh chives, minced .
  • 1/4 c unsalted butter, at about room temp

Directions
  • Step #1 For Basil Chive Butter:.
  • Step #2 Blanch the basil leaves in boiling salted water just until wilted, about 10 seconds.
  • Step #3 (This will retain the color.
  • Step #4 ).
  • Step #5 Drain & transfer to ice water.
  • Step #6 Drain again & squeeze dry in paper towels or dish towel.
  • Step #7 (The basil must be dry.
  • Step #8 ).
  • Step #9 Chop roughly.
  • Step #10 Puree the basil with olive oil & salt, adding butter a bit at a time.
  • Step #11 Remove to a bowl & stir in the chives.
  • Step #12 Chill until it can be molded.
  • Step #13 Form into 4 equal pieces.
  • Step #14 Chill until serving time.
  • Step #15 For Salmon:.
  • Step #16 Soak cedar plank(s) in water to cover for 45 to 60 mins.
  • Step #17 (You may have to weigh the plank(s) down with a can.
  • Step #18 ).
  • Step #19 Preheat oven to 400F degrees.
  • Step #20 Transfer plank to a foil wrap-lined baking sheet.
  • Step #21 Brush bottom of salmon with butter & sprinkle with a bit of the seasoning.
  • Step #22 Place on the cedar plank.
  • Step #23 Brush top this with butter & sprinkle with seasoning.
  • Step #24 Roast for 14 to 20 mins, depending on thickness of salmon.
  • Step #25 Remove salmon to serving plates & top each piece with a piece of Basil Chive butter.
