Cranberry, Sausage And Apple Stuffing Recipe

Ingredients
  • 1 lb sweet Italian sausage, casings removed
  • 12 c white bread cubes, baked until slightly dry
  • 2 c sliced celery
  • 1 c dried cranberries
  • 4 tsps poultry seasoning
  • 1 1/3 c chicken stock
  • 1/4 c butter
  • ground black pepper to taste
  • 6 c coarsely sliced leeks
  • salt to taste
  • 3 tart apples - peeled, cored & sliced
  • 2 tsps dried rosemary, crushed

Directions
  • Step #1 Saute; sausage in a large skillet over med-heat/flame, crumbling coarsely, for about 10 mins.
  • Step #2 Remove sausage to a large bowl with a slotted spoon.
  • Step #3 Empty pan of grease.
  • Step #4 Into the same pan melt the butter.
  • Step #5 Add the leeks or onions, apples, celery & poultry seasoning.
  • Step #6 Saute until softened, about 10 mins.
  • Step #7 Add the rosemary, dried cranberries & cooked sausage.
  • Step #8 Mix all with the dried bread cubes.
  • Step #9 Spice up to taste with salt & pepper.
  • Step #10 Moisten with the chicken stock.
  • Step #11 Stuff turkey with about 5 c for a 14 lb turkey.
  • Step #12 Add extra chicken stock to moisten stuffing if needed.
  • Step #13 Remaining stuffing can be baked in a covered buttered casserole at 350 degrees F (175 degrees C) for about 45 mins.
  • Step #14 Uncover & bake for another 15 mins to brown top.
